Old Fashion Chocolate Peanut Butter Oatmeal No-Bake Cookies

No need to heat the oven for these classic chocolate and peanut butter cookies without baking! They’re quick, easy and a super tasty treat that is one of the first recipes I learned to make when I was a kid.

I made so many batches of no-bake cookies when I was young! We always had the ingredients on hand and they were so simple to make that they were sort of my favourite recipe. Especially since I didn’t need my mother to help me put the pans in the oven and take them out.

Actually, everything about peanut butter and chocolate is a bit of a slam-dunk in my book.

But it’s the addition of quick oats that completes the trio of chocolate, peanut butter and oatmeal in these classic no-bake cookies.

I am a big fan of oatmeal cookies in all their delicious varieties. It’s the wonderful soft texture and oat flavour that speaks to me.

But unlike these options, these no-bake chocolate and peanut butter cookies are naturally gluten-free, as long as you make sure you cook with gluten-free oats.

Can you put the no bake cookies in the fridge to harden?
You should not need to put your no bake cookies in the refrigerator to harden. They will do this on their own within 20 to 30 minutes of being placed on a cookie sheet, as the oats absorb extra moisture and the chocolate-peanut butter mixture cools.

Ingredients

2 cups of sugar

1/2 cup of milk

1/2 cup of butter

1/4 cup cocoa powder

3 cups quick oats

1 cup smooth peanut butter

1 tablespoon of vanilla

Instructions

Line two baking sheets with parchment paper. Set aside.

In a medium saucepan, bring sugar, milk, butter and cocoa powder to a boil, stirring occasionally. Once the mixture comes to a boil, boil for a full minute, then remove from the heat.

Add the oat flakes, peanut butter and vanilla and stir until well blended.

Place tablespoons of dough on prepared baking sheets.

Let stand at room temperature until cool.
