This is a very refreshing salad that is creamy and favourful. The texture of our salad is very soft, but thanks to the granulated onion and celery, you get to have a taste of some crunchiness too. The chicken is diced and coated in olive oil, salt and granulated onion. Then, it is placed in the oven to cook. Once it is in the right texture, it is cooled. Then, we add the remaining ingredients. We place our salad back to the fridge to chill to soak in its seasoning and be rich in flavours.

INGREDIENTS:

  • 500 grams. Of diced boneless chicken breast
  • 300 grams. Of diced boneless chicken thigh.
  • 2 Tbsps. Of olive oil.
  • ½ Tsp. Of sea salt.
  • ¼ Tsp. Of black pepper.
  • ½ Tsp. Of granulated onion.
  • ⅔ Cup. Of mayonnaise.
  • 3 stalks.Of diced celery.
  • Sea salt and black pepper.

 

INSTRUCTIONS:

  1. Coat the chicken breasts and thighs with oil.
  2. Add some cracked black pepper, salt and granulated onion to the chicken.
  3. Place the seasoned chicken in a baking dish and cover it with aluminum foil.
  4. Bake at 350 degrees Fahrenheit for a maximum of 30 minutes until the internal temperature of the chicken is at least 165 degrees.
  5. Cool the chicken for at least 10 minutes. Then, place it in the refrigerator for more than an hour.
  6. Once they are chilled, dice the chicken breasts and thighs into ¼ inch long and half inch wide.
  7. In a large bowl, put the cut chicken, mayonnaise and celery. Combine everything.
  8. Cover the chicken and place it in the fridge for at least one or two hours. You can even keep it overnight. It will give the chicken a chance to soak in flavours.
  9. Add more salt and pepper if necessary.
  10. Serve and enjoy!

 

Notes:

  You can chill it at the end for an hour or two or even overnight. It depends on when you would like to serve it.
