I have a huge coconut-loving person in my life, my dad. He loves everything coconut-related : the coconut cream pie, coconut macaroons coconut magic bars made of raspberry and, of course, these delicious almond Joy cookies. These cookies are so easy to bake and cook to gooey, gooey perfection.

This means there’s no flour, no eggs, and no butter… what exactly is in these cookies , you are asking? Chocolate chips coconut, almonds, coconut and sweetened condensed dairy – just that ! I scoop the cookies onto a cookie sheet lined with parchment and then let them sit for 12 to fourteen hours. When the bottoms begin to appear golden brown and there’s some coconuts with brown tips , it’s time for the cookies to be released !

After scooping the cookies using the cookie scoop I dampened my fingers and then press the cookies into more of a disc-like design. The cookies have the same shape coming in and out, so it’s all your choice !

Ingredients

1 cup butter

1 1/2 cups of white sugar

1 1/2 cups of brown sugar

4 eggs

3 teaspoons vanilla

4 1/2 cups flour

2 tablespoons baking soda

1 teaspoon of salt

5 cups chocolate chips

2 cups sweetened coconut

2 Cups chopped almonds

Directions

The oven should be pre-heated to 375°F. Lightly grease the cookie sheets.

Combine dry ingredients, set aside.

A large mixing bowl mix the sugar and butter. Beat in the eggs one at a time, then stir into vanilla. Stir in the dry ingredients until blended, then add the chocolate chips as well as coconut and almonds. Drop by small tablespoonfuls of rounded spoonfuls onto the cookies sheets.

Bake at least 8-10 mins. Cool on baking sheet for 5 mins before moving to an air-tight rack to completely cool.
