You have a party coming up or guests coming for a day and you don’t know what to make to make them feel valued. This cake is for you. The shape of the cake and the cream on top gives the impression that it was a made by a pastry chef. This cake has 3 layers. It is very soft, spongy and creamy. Don’t be scared of the 3 layers. They are very easy to put together. You should only follow this recipe.

 

Because our Margarita cake is big and very tasty, it takes some time to prepare. However, it is worth it. You and your loved ones deserve every bite of this heavenly cake. Make it for you guests and I assure you that they will feel appreciated.

INGREDIENTS:

Cake:

  • 6 cups flour
  • 1/2 teaspoon baking soda
  • 3 and 1/2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 3 cups of softened unsalted butter
  • 4 cups sugar
  • 4 large egg whites
  • 3 teaspoons pure vanilla extract
  • 1 and 1/2 cups Whole milk
  • 1/2 cup lime juice
  • 1 cup tequila
  • 4 tablespoons lime zest

 

To decorate :

  • Lime slices
  • Lime zest

Frosting:

  • 3 cups of softened unsalted butter
  • 3 cups shortening
  • 12 cups powdered sugar
  • 3 tablespoons grated lime zest
  • 6 tablespoons fresh lime juice

 

To decorate,

  • Lime slices
  • Sugar sprinkles

 

INSTRUCTIONS:

  1. Start by heating the oven to 180 degrees Celsius (350 Fahrenheit).
  2. Prepare 3 cake pans by greasing them with baking spray.
  3. Take your dry ingredient: flour, baking soda, baking powder and salt. Combine everything in a large bowl
  4. Mix butter and sugar with a standing mixer until the texture is light and soft.
  5. Combine the egg whites and vanilla until you obtain a fluffy texture.
  6. Beat the dry ingredients and milk until they are well combined.
  7. Add in the lime juice, lime zest and tequila. Beat everything until well combined.
  8. Pour the batter in the 3 cake pans. Make sure to evenly divide it.
  9. Place them in the heated oven and bake them for 25 to 30 minutes. If you stick a toothpick, it should come out clean.
  10. Remove the cakes from the oven and let them cool aside.

 

Let’s make the frosting:

  1. Beat all ingredients using a standing mixer until they are well combined and you obtain a soft and creamy frosting.
  2. Put 1 cup of the frosting in a piping bag and set aside.

 

How to make the 3 layers?

  1. Place one cake on the cake board.
  2. Smooth 1 cup of frosting evenly on the cake.
  3. Put the second cake on top.
  4. Scoop another 1 cup of frosting and spread it evenly on the second cake.
  5. Place the third cake on top of the frosting.
  6. Cover the cakes with the rest of the frosting.
  7. Using a piping bag, make some dollops of frosting on the top of the Margarita cake.
  8. Put the lime slices and sprinkle the lime zest on top.
  9. Put your three-layer cake in the refrigerator for one hour.
  10. Remove it from the fridge after the frosting has hardened, cut it into slices, serve and enjoy!
