Roast, Potatoes, Carrots & Onions

Roasted vegetables, potatoes as well as onions make a straightforward and comforting meal that everyone enjoys! Naturally gluten-free and vegan.

There’s something comforting about potatoes. Mashed potatoes, fries, or roast potatoes, they all provide comfort.

As a child my parents would frequently cook the fried potato, carrots and onions. It was laborious, and you needed to participate during the cooking process, mixing the potatoes frequently to ensure they didn’t get stuck.

As lazy in the kitchen (not at all, but constantly distracted by 2 young boys) I’m not a fan of making potatoes fry if I don’t need to. I’ve lost track of what I’m doing numerous times only to be reintroduced to reality when I smell the smell of burning potatoes.

That’s the reason I love these cooked carrots, potatoes and onions. They’re wonderful tasty, cozy, and comforting yet very easy to handle. Cut the ingredients into pieces, mix it in oil, and then bake into the oven. In about 45 minutes you’ll be served a quick and delicious side dish that’s ideal to serve alongside beef, chicken or as a stand-alone dish.

INGREDIENTS

Five Yukon Gold potatoes peeled and diced

1 large sweet onion diced

5 carrots peeled and cut into pieces

1/3 cup olive oil

1 teaspoon of salt according to taste

1/4 teaspoon of pepper or according to your preference.

 

INSTRUCTIONS

Preheat the oven until 425°F. Prepare a baking tray with parchment.

Place the onions, potatoes and carrots on the baking sheet and then drizzle with olive oil. Make sure that all the vegetables are covered evenly with oil.

Add salt and black pepper to your dish.

Bake at 425°F for 40 to 50 minutes, turning it over frequently. Sprinkle with salt and pepper, if you like. Enjoy!
