Let’s get cooking!

  1. First, preheat your oven to 350°F (175°C) and lightly grease a 9×13 baking dish.
  2. In a large skillet, cook the bacon until crisp. Remove it from the skillet and drain on paper towels. Crumble the cooled bacon and set aside.
  3. In the same skillet, cook the onion and bell pepper until they’re tender.
  4. Layer half of the thawed hash browns in the baking dish. Top it with half the cooked bacon, half the onion and bell pepper mixture, and half of the shredded cheese. Repeat these layers with the remaining ingredients.
  5. In a separate bowl, beat the eggs with the milk and season with salt and pepper. Pour this mixture over the layers in the baking dish, making sure to cover everything evenly.
  6. Bake in the preheated oven for about 45-50 minutes, or until the eggs are set and the cheese on top is bubbly and slightly browned.
  7. Allow the casserole to rest for a few minutes before slicing and serving.
