Americans have a unique way of honoring their Irish heritage. If we forget to wear something green on St. Patrick’s Day we pinch each other. We make green food regardless of whether they have any connection with Ireland and adapt traditional Irish recipes for our own tastes.
This Irish beef stew is an example of this. lamb, as any Irishman will tell you is the best meat to make a great Irish stew. In the USA, we tend to eat more beef than lamb so when we make stews to celebrate Irish culture, we use beef.

Ingredients
2 pounds of beef lean stew meat
1 teaspoon oil
One teaspoon of organic honey
1 onion cut into pieces
2 celery stalks cut into dices
1 head of broccoli (as as per your preference)
2 carrots peeled and chopped
1/2 turnip, diced
1 tablespoon chopped parsley
3 cloves garlic, minced
1 entire bay leaf
4 cups of organic beef broth
3 scallions cut into pieces
Peas can be purchased, but they are not required.
Directions
In a large pan prepare the meat by browning it with hot oil. After cooking, place the meat into the slow cooker.
Pour the stock into a saucepan and heat to a simmer.
Cook the celery, garlic and onions for 2 minutes.
Pour the beef stock and other vegetables into the slow cooker. Add honey and herbs after which cover and cook at low temperature – do not boil for 4 to 8 hours. Take out the bay leaf prior to serving. Enjoy!
