This recipe was discovered by me a few years ago while looking through my mum’s old cookbook. It was a simple recipe that I made once, and I’ve never looked back. I needed fresh parmesan and zucchinis to make this crispy snack. I was able to find them in my kitchen and made the delicious bite that would change the course of my life.
You won’t be able put them down, trust me. The best part, or should I say scary part? It is so easy to make. The crisps are ready in just 15 minutes. They can be deep-fried to perfection with a Panko Parmesan and flour coating. They can be baked for a healthier option. However, I fried them to get that perfect golden brown crust. It’s a hit with my kids, my husband, and we all love it. I’ve made them three times in the past two weeks and will make them again. Serve this dish at a family meal to see how they react.

Ingredients
1/2 cup vegetable oil
1 cup Panko
1/2 cup grated Parmesan cheese
2 zucchinis, thinly cut to 1/4-inch thick rounds
1/2 cup all-purpose flour
2 large eggs, beaten
Directions
Step 1 :
Heat the vegetable oil in a large skillet on medium heat. Combine Panko with Parmesan in one bowl.
Step 2
Dip zucchini rounds in flour and dip them in eggs. Then, dip the zucchini in Panko mixture. Press to coat each batch. Cook the zucchini rounds in the skillet for about 5-6 minutes or until they are crispy and golden.
Step 3 :
Transfer the mixture to a plate lined with paper towels. Drain and serve immediately
