This American soup works wonders. It can make you lose weight! Some people might think that because of that it would taste horrible, but it is quite the contrary. The taste of garlic, oregano, basil and tomatoes gives this soup a wonderful taste. In addition to its ability to make you lose weight, it has many health benefits because it’s low in calories, nutrient-dense, fat-free, and sugar-free. What is also great about this is soup is that although it is 100% vegan, you can adapt it to your style of eating. You can add milk , fish , chicken, pork or even lamb.

 

Cabbage soup is very easy to make and it is time efficient. You only need 3 main steps to prepare it. It only takes 30 minutes in total: 10 minutes for preparation time and 20 minutes for cooking.

 

Ingredients:

8 cups vegetable broth

1 chopped yellow onion

3 minces cloves garlic

4 cups cabbage , cut into 1 inch chunks

3 sliced carrots ,

3 sliced stalks celery ,

1/2 teaspoon Kosher salt

1/2 teaspoon coarse ground black pepper

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

28 ounces diced tomatoes , do not drain

 

Method:

Chop all your vegetables.

Add all the ingredients in a soup pot and stir.

Once it comes to boil, lower the heat and cook it for 20 minutes until the cabbage and carrots are tender.

P.S.: You can add a tablespoon of red pepper flakes to give it a little kick.

 

How to serve?

  • Serve the soup in a bowl with a side of baked potato with butter. The flavor will go good with the garlic cloves in the soup.
  • Top the soup with freshly chopped green onion and a sprinkling of fresh parsley or cilantro (fresh coriander) for a vibrant pop of color.

 

How to store?

  • To store Wonder Soup, let it cool to room temperature for 2 hours with a lid on. Then, put it in an airtight container. This recipe can keep well in the fridge for up to a week.
  • Freeze: You can also store Wonder Soup in the freezer. It will store well for up to 3 months!

 

You can add up broth and heat up one serving at a time either on a stovetop or in the microwave for few minutes.
