Ingredients for Spider Cupcakes:

For the Cupcakes:

  • 200g Unsalted butter (softened)
  • 200g Billington’s Unrefined Golden Caster Sugar
  • 3 Free-range medium eggs
  • 150g Allinson’s Self Raising White Flour
  • 50g Cocoa powder
  • 1 tsp Nielsen-Massey Chocolate Extract

For the Decoration:

  • 400g Silver Spoon Icing Sugar
  • 200g Unsalted butter (softened)
  • 96 Liquorice sweets (strands)
  • 12 Oreo cookies
  • 12 Mini marshmallows

 

Method:

Step 1:

  1. Preheat the oven to 180ºC (Gas mark 4) and line a cupcake tin with 12 cupcake cases. Use black cases for the spiders’ bodies!

Step 2: 2. Cream together the softened butter and sugar until pale and fluffy. Then, add the eggs one by one, beating well between each addition. Finally, add the chocolate extract.

Step 3: 3. Carefully fold in the flour and sifted cocoa powder. Spoon the batter into the cupcake cases, filling them about 2/3 full. Bake in the oven for approximately 20 minutes or until a skewer inserted into the center of a cupcake comes out clean. Remove from the oven and allow them to cool.

Step 4: 4. To make the buttercream, beat together the softened butter and icing sugar until it becomes light and fluffy. Spoon the buttercream on top of the cooled cupcakes, using the back of a spoon to smooth the buttercream into a dome shape.

Step 5: 5. Cut the liquorice strands into segments for the spider legs. Carefully place 4 legs on each side of the cupcake. Put an Oreo cookie on top for the spider’s body. Halve a mini marshmallow for the eyes and add a tiny piece of liquorice for the center of each eye.
