This is the ultimate dessert for summer! It’s a must to make it! The chilling time is one hour to chill the filling of butter/cream cheese. There’s another 4 hours to chill prior to serving. It is best to plan the filling a day in advance as I found that the 4 hours time was not enough time because the filling did not turn out sufficiently hard.

1 8-oz package cream cheese (softened)

1 cup of powdered sugar

1 cup crushed pineapple (drained)

1 8-oz tub of whipped topping, similar to Cool Whip

Crust

1/2 cup of sugar granulated

1 cup of butter that has been melted

20 Graham crackers crushed

Topping

1/4 cup of coconut shredded

1 cup of diced pineapple (drained)

 

Instructions:

 

In a large mixing bowl make the cream cheese using an electric mixer till fluffy

Gradually introduce the powdered sugar and mix until the sugar is thoroughly combined.

Mix with the topping whipped, and then beat until smooth.

By using a spatula, fold in the crushed pineappleand then put it aside.

In an individual mixing bowl, blend the crushed crackers with sugar granulated and butter until it is well-combined Then, you can press it into a 9×9 baking dish.

Pour the filling over the crust and smooth it out with a spatula to make sure it’s the crust is even

Sprinkle with shredded coconut and pineapple dices, and keep refrigerated until 2 hours after which or until the pineapple is firm.
