MARINATED CUCUMBERS, ONIONS, AND TOMATOES

The birthday of my son falls during the summertime, in the late spring and early summer season. This is why we typically host a barbecue for his birthday celebration. Who doesn’t love hot dogs? I like to keep it simple because I’m doing my best to run around like a chicken having my head chopped off, trying to make sure that everything is working perfectly. I do have an issue with things that aren’t running smoothly, especially when it’s my responsibility to ensure they are. Therefore, the only thing I need to think about is food. My husband grills the food so it’s all secured.

It’s not enough to just serve hot dogs and hamburgers though. I must have some other food items to serve. Most often, we serve some pasta salads and potatoes of some sort as a way to vary the menu and to ensure everyone is fed. In the past, I thought to test my mom’s cukes salad recipe.

Her recipes were always excellent and when I did achieve it, I was unable to recall what exactly happened to the recipe. She was away at a conference to attend work, and I was unable to reach her. It was through sheer luck that I came across the recipe from Spend With Pennies, and thank God that I found it!

For this recipe, you’ll need some of the ingredients below:

Ingredients:
3 medium cucumbers peeled and cut 1/4 inch thick
One medium onion cut into slices and reseparated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup of water
2 teaspoons of salt
1 teaspoon freshly ground coarse black pepper
1/4 cup oil
One teaspoon fresh mint chopped (optional)

Directions:
1. Mix all the ingredients together in the bowl of a large size.
2. Mix well and toss.
3. Refrigerate at least two hours before serving.
