I’m giving 4 stars for the original “meatloaf muffin” idea. The meatloaf in itself could have been more flavorful and lighter, according to me. This time around,, I added two eggs, two slices of bread, and enough milk to cover the bread. I also added the basil leaves as well as a teaspoon of Oregano and a handful of roesmary leaves. The muffins turned out fantastic.
I’ve made meatloaf muffins for a long time. I tested this recipe and enjoyed it. According to the recipe, make sure you use LEAN ground beef otherwise you’ll get grease inside the tins. I’ll make this again. Thank you for this recipe.
Fantastic! I made it with cream of mushroom soup. I included some grated cheese from Parm and some garlic powder and some parsley. I had to alter the bread crumbs to account for the creamy soup. I sprayed the tin using non stick spray and experienced no issues with grease or oil. It was simple and quick and everyone enjoyed it, including those who are people who are picky eaters. Ingredients
1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Directions
Preheat oven to 450°F
Place ground beef in a large bowl. In a food processor, pulse celery and onion. The bell pepper should be cut in half. Add the pepper to the food processor in small pieces. Use the processor blades on the food processor to chop the vegetables finely and then add them to your meat bowl. To the bowl, add egg, beaten in milk, breadcrumbs, and grill seasoning. Mix together the Worcestershire sauce, salsa, and smoky barbecue sauce. Combine half of the sauce mixture with the meatloaf mixture. Use your hands to mix the meatloaf. Clean up. Use a 1/2-cup of vegetable oil or extra virgin olive oil to brush a 12-muffin pan. To help fill the tins with meat, use an ice cream scoop. Add a tablespoon of sauce to each meat loaf. Bake for 20 minutes. To check that the muffin is cooked, cut one muffin in half.
