You’ve probably had the popular broccoli salad at a picnic. It is crunchy, sweet and creamy, and packed with cheese and bacon.
Today I present to you a low-carb broccoli cauliflower salad. This dish was a hit with me and I will continue to make it throughout the summer. It’s just 1.9g net carbs per portion, which I love !
INGREDIENTS
1 cup mayonnaise
1 tablespoon Swerve or another sweetener
2 tablespoons apple cider vinegar
3 cups raw broccoli
3 cups raw cauliflower
1/2 chopped red onion
1/2 cup cheddar cheese, shredded
8 oz bacon, chopped and cooked
1/2 cup chopped raw pecan pieces
INSTRUCTIONS
Add the Swerve, mayonnaise and apple cider vinegar to a bowl. Mix well.
Mix all ingredients in a large bowl.
Keep in the refrigerator until you are ready to use.
