If you prefer dark chocolate, you can use Hershey’s special dark cocoa instead of a regular Hershey’s cocoa. This sweet is also buttery. In terms of the texture, it is not too soft and no too thick. It is in-between these two consistencies. This fudge is has a very creamy texture. If you like to have a crunchy texture, you can add any nuts that you prefer, either almonds or peanuts, etc.

INGREDIENTS:

  • 3 cups sugar
  • 2/3 cup HERSHEY’S Cocoa
  • 1/8 tsp salt
  • 1 1/2 cups milk
  • ½ stick (1/4 cup) of butter
  • 1 tsp vanilla extract

 

INSTRUCTIONS:

  1. Lay foil in an 8 to 9-inch square pan extending it over the edges.
  2. Spread some butter over the foil.
  3. In a heavy 4-quart saucepan, mix together cocoa, salt and sugar. Add in milk and stir everything.
  4. Place the saucepan over medium heat for the ingredients to cook. Do not forget to stir constantly until the mixture boils. Once it does, stop stirring and continue to boil. (The mixture should reach the temperature of 234 degrees Fahrenheit on candy thermometer.
  5. Remove the saucepan from the heat.
  6. Add in butter and vanilla. (Do not combine)
  7. Allow the mixture to cool at room temperature until it’s lukewarm (110 degrees F)
  8. Beat the mixture with a wooden spoon until you have a tick consistency. (for about 7 minutes)
  9. Spread the fudge quickly in the prepared pan. Cool it completely.
  10. Cut into squares and enjoy.

 

Notes:

  • If you do not have a candy thermometer, drop a small amount of the mixture in very cold water. It should form a soft ball that flattens when you remove it from water.
  • If you use a candy thermometer, make sure that you do not rest its bulb on the bottom of saucepan.
  • It is necessary to follow the instructions as they are. If you beat the mixture for too long, it becomes hard. If you beat too little, you risk to have a soft fudge.
  • Do not double the amount of ingredients to double the quantity. We recommend that you stick to the recipe as it is.
  • You can use HERSHEY’S SPECIAL DARK Cocoa instead of the regular one.

 

Variations:

You can add any nut that you like for a crunchy texture. You can add walnuts, pecans or almonds. Then, spread the fudge quickly in the pan.

 

How to serve?

Serve on Parchment paper on a plate with your favourite drink. (Preferably a hot drink)

 

How to store?

  • You can store it in a tightly covered container at room temperature.
