Ingredients
1/2 cup softened butter
1 cup of sugar
2 large eggs
1 very ripe banana crushed
1 Cup crushed fruit (do do not drain)
2 cups of flour
1 tsp baking soda
1/2 tsp baking soda
1/4 teaspoon salt
1/4 cup of coconut shredded
Instructions
Preheat oven to 350°F.
in a bowl large enough, mix sugar and butter with an electric mixer until it becomes light and fluffy. Add eggs one at a moment, and beat until they are incorporated.
Mix in the mashed banana and pineapple.
In a separate medium-sized bowl, mix together baking powder, flour baking soda, salt. Add the dry ingredients.
Mix in coconut shreds or coconut flakes.
Put the mixture in an oven-proof loaf pan (9×5). Bake for about 60 minutes or until a toothpick is clean.
