It was incredible! Because Cracker Barrel’s meatloaf contains green peppers, I also added them. The cook time is correct. I did temp it at the time stated. It was 180 degrees. I don’t know what cheese or ketchup does to make it red, but it was done. It was still pink when I tried it again. The temperature was 195. My son loves it! This was a delicious recipe that I made last night for dinner. Everyone loved it! It turned out great, even though I was unsure if the glaze was too thick. The recipe was doubled and I used 2.5 lbs beef and 1.25 pounds pork. Club crackers were also used, since I didn’t have ritz. I raised the oven temperature to 400, as others have done… and increased the cooking time by about an hour. PERFECT. YUMMY. You are a KEEPER.

2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 ounces shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
Ground beef 1 1/2 lbs
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon mustard

DIRECTIONS
Preheat oven to 350F
Beat eggs. Add milk and crackers. Add onion and cheese. Mix in ground beef. Combine well. Shape into a loaf.
Bake at 350 degrees for 45 minutes.
To make topping, combine mustard, brown sugar, and ketchup. After 30 minutes of baking, spread half the topping on the meatloaf. Bake the loaf for another 10 minutes. Place the remaining topping on top of the meatloaf and return to the oven for another 5-10 minutes.
