Who would not like to have something sweet during their day? Especially after lunch or dinner for dessert. In this recipe, we are learning how to make a special cake made with Coca Cola.

 

Many people love the taste of Coca Cola and would like to integrate it in many of their recipes. This cake is full of flavours. So as not to have only the taste of Coca Cola, we combined many ingredients with it. On the top of these ingredients, we have cinnamon, vanilla and cocoa powder. This mix makes this cake very special and tasty. In addition to this, the texture of this treat is quite indescribable. The cake without the glaze is spongy, fluffy, light and soft, With the glaze on top it becomes moist enough. The glaze also accentuates the tastes of our cake. The pecans in the glaze create crunchiness which brings balance to our soft cake.

How to serve?

  • You can serve it in the pan if you want it only for yourself.
  • If you have guests coming, serve it on a special cake plate. Once it comes out from the oven, let it cool for a little bit then remove it from the pan. (It should remain warm) We do this so that the cake does not break) After this, you can pour the glaze on top and leave it to cool thoroughly.

 

How to store?

I doubt that you are going to have anything left once you serve this cake, but in case that you do, make sure to leave it in an airtight container in the refrigerator.

 

INGREDIENTS:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 3 sticks unsalted butter, (divided) (almost 339g of unsalted butter)
  • 1/2 cup unsweetened cocoa powder, (divided)
  • 1 1/2 cup Coca-cola, (divided)
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp. vanilla extract
  • 4 cups powdered sugar
  • 1 cup chopped pecans

 

INSTRUCTIONS:

  1. Prepare the oven by heating at 350 degrees Fahrenheit.
  2. Grease your 13×9 inch baking dish with non-stick spray.
  3. In a bowl, sift these dry ingredients: flour, salt, baking powder, sugar and cinnamon. Leave it aside.
  4. Place a saucepan on the stove on medium heat.
  5. Melt 2 sticks of unsalted butter. Mix in ¼ cup of cocoa powder, 1 cup of Coca-Cola and half cup of buttermilk. Allow these ingredients to cook together until they come to boil.
  6. Add this liquid to the previously sifted dry ingredients and combine.
  7. Mix in the eggs and vanilla extract using a whisk.
  8. Pour the batter into the baking dish and place in the oven to cook for 30 minutes until you insert a toothpick and it comes out clean.
  9. When there is 10 minutes left for the cake to be fully cooked, start preparing the glaze.
  10. Over medium heat, place a saucepan. Add in the remaining stick of unsalted butter, with a ¼ cup of cocoa powder and half cup of Coca-Cola.
  11. Allow it to boil then remove it from the stove.
  12. Add in the 4 cups of powdered sugar and beat.
  13. Stir in the 1 cup of chopped pecans in the glaze. Pour the warm glaze on top of the cake while it is still hot.
  14. Allow the cake to cool completely. Serve and enjoy!

 

Notes:

  • If you do not like pecans, you can use any nut that you like.
  • You can use homemade buttermilk, if you have it ready.
