INGREDIENTS:
- 1 lb lean ground beef
- 1 medium chopped onion
- 3 minces cloves of garlic
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper
- 2 tablespoons brown sugar
- 1 (15 ounces-can) tomato sauce
- 1 (14.5 ounces-can) low sodium beef broth
- 1 cup of uncooked long grain white rice
- 2 tablespoons olive oil
- 1 chopped medium head green cabbage
- 1 1/2 cups finely shredded sharp cheddar
- 1 1/2 cups finely shredded Monterey Jack Cheese
INSTRUCTIONS:
- Start by heating your oven at 350 degrees Fahrenheit.
- Grease your 9×13 inch casserole dish with olive oil or spray it with non-stick cooking spray or olive oil spray.
- In a skillet, cook the ground beef until it is halfway browned. Then, add the onion. When the ground beef is fully browned, reduce the heat to low and add garlic. Cook for a minute while continuously stirring. Drain any additional fat in the skillet.
- Add beef broth, rice, paprika, onion powder, brown sugar, cayenne and tomato sauce to the cooked ground beef skillet. Allow it to boil a little bit. Cover the skillet with a lid and let it simmer for 20 minutes. The rice should be tender.
- Put another large skillet over medium heat.
- Heat 1 tablespoon of olive oil.
- Cook half of the cabbage for 5 to 7 minutes.
- Once the cabbage is cooked, spread it over the bottom of the casserole dish.
- Add half of the cooked ground beef mixture on top.
- Blend the cheeses together and sprinkle half of the quantity over the ground beef mixture.
- Repeat the same process with the remaining ingredients: cook the cabbage, spread it over the cheeses, spread the beef mixture and sprinkle the remaining cheese blend.
- Using aluminum foil, cover the casserole dish and place the latter to cook in the oven for 20 minutes.
- Take it from the oven, remove the aluminum foil and put it back in the oven to cook for another 20 minutes until the cheese is slightly brown.
- Serve while it is warm and enjoy!

- Other things you can change or add about this recipe:
- You can add 1 to 2 tbsps of Cajun seasoning to the other spices.
- You can also add 1 to 2 pinches of crushed red pepper to the tomato sauce to add a tangy kick to our recipe.
- You can also add minced jalapeno when you add the minced garlic to the cooked ground beef.
- When you pour the tomato sauce, you can also add a 14.5-ounce can of fire-roasted tomatoes.
- Instead of Monterey Jack cheese, you can use pepper jack cheese.
- You can make this whole casserole in a large skillet, just make sure that it is oven proof. Or you can just make it by using the stovetop only.
