Baked beans are an iconic dishthat I am awestruck by the variety of flavors available Based on your preferences and your location the beans you choose to eat could be sweet, savory, or smokey. They are a fantastic mix of all three ! There is a savory taste from the sauteed peppers and onions and sweet from brown sugar and and the smokey flavor of the molasses and, of course, bacon.

It’s possible to cook bacon in any way you like, but you’ll want to make about 10 strips. I decided to bake my bacon since I’m not very patient when it comes to frying bacon. I also spiced the bacon using a mix of chili powder, pepper dried rosemary, brown sugar. It’s my favorite bacon seasoning and it’s a LOT of fun !

Ingredients

10 bacon slices halved

1 finely chopped yellow onion

1 green pepper, finely chopped

54 oz pork can and beans, or equivalent numbers of smaller cans

4 Tbsp of ketchup

1/4 cup of molasses

1/3 cup of brown sugar

1/4 cup cider vinegar

2 teaspoons dry mustard

 

 

Instructions

The bacon should be cooked about halfway through (in any way you like) Then, place it aside to drain onto a towel.

Preheat the oven at 325 ° and then set the rack to the lower-middle position.

In a large skillet cook about 2 tablespoons from bacon fat (or butter) on medium heat. Add the diced onion and green pepper. Cook for approximately 5 minutes, until they soften.

Mix in the remaining ingredients and mix thoroughly. Allow the mixture to simmer for at least a minute more.

As the stew simmers while it simmers, grease a baking dish that measures 13×9.

Place beans in the baking dish, then put bacon that has been cooked over the beans.

Bake for a minimum of 2 hours, depending on the desired consistency.

Let the beans sit for 5 minutes prior to serving.
