Broccoli, Rice, Chicken, and Cheese Casserole

1 Tablespoon olive oil 1 Tablespoon olive

One 1/4 cup of white, long grain white rice not cooked

2 cups of fresh broccoli florets cooked but not cooked.

10.5 oz. Condensed Cream of Chicken Soup


1/2 cup milk

1/2 cup sour cream

2 cups cheddar cheese that has been shredded Separated

Optional Seasonings

One teaspoon of dried thyme

1 teaspoon of garlic powder

Casserole Topping

1 cup Ritz crackers, crushed

2 Tablespoons of melted butter


The oven should be preheated to 350°F.

Cut the chicken into bite-sized pieces. Season with Italian seasoning and the desired amount of salt and pepper.

Cook butter in an oven-proof pot on medium-high heat until it melts. Then add the chicken and cook until golden all over approximately 5 minutes.
Take it off and put aside. Take note that this procedure is not necessary if you are you cook a roast chicken.

Incorporate the broth of chicken, olive oil and rice to the pot . bring to a boil. Then reduce the heat to an evaporative simmer.

Cook in a tightly sealed container for 7 minutes .
