Apple Bundt Cake

INGREDIENTS:

  • 2 cups of peeled, cored and diced apples
  • 1 tablespoon white sugar
  • 1 teaspoon ground cinnamon
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups white sugar
  • 1 cup vegetable oil
  • ¼ cup orange juice
  • 2 ½ teaspoons vanilla extract
  • 4 eggs
  • 1 cup chopped walnuts
  • To dust on top, ¼ cup confectioners’ sugar

 

 

INSTRUCTIONS:

  1. Prepare the oven by heating it at 175 degrees Celsius ( 350 Fahrenheit).
  2. Grease your 10-in Bundt or tube pan with non-stick baking spray or butter and flour it.
  3. Mix the diced apples with 1 tbsp. of white sugar and cinnamon in a medium bowl. Put it aside.
  4. In another bowl, sift the flour, salt and baking powder. Put it aside.
  5. Beat on high speed 2 cups of white sugar with oil, orange juice, eggs and vanilla. You should obtain a smooth mixture. Stir in the flour mixture.
  6. Add in chopped walnut and fold so that the eggs do not break while combining all ingredients.
  7. In the greased and floured pan, pour 1/3 of the batter.
  8. Add half of the apple mixture on top.
  9. Add another layer of batter then the rest of the apple mixture. Then finally, top with the batter.
  10. Place it in the oven to bake for 55 to 60 minutes.
  11. Allow it to cool in the pan for 10 minutes or more.
  12. Turn it out on a wire rack and allow it to cool completely.
  13. Sprinkle the ¼ cup of confectioners’ sugar on top.
  14. Serve and enjoy!

 

Notes:

    • It is better to peel the apple because they become softer and they caramelize once they are baked in the oven.
    • Allow it to cool as much as possible once it is baked so that it does not break while cutting.

 

How to serve?

This Apple Bundt cake is cut into pieces and served with your favourite beverage; either a cold or a hot drink depending or your preference.

How to store?

    • You can keep the leftovers stored and covered in an airtight container in the refrigerator.
    • It can also be kept at room temperature but must be in an airtight container. It is to be consumed as soon as possible this way.
