Salads are one of the best dishes that I love to prepare; especially during summer. They are very quick to prepare. They give you the option to add or remove any ingredients that you want or do not want. They also do not demand a lot of effort. They are fast and easy to prepare. In this article we are going to make a cucumber salad.

This cucumber salad can be served alone or as a side dish to barbecue; either chicken, shrimp or even meat. This refreshing dish is prepared with 3 main ingredients. What you need is 2 English cucumbers, some red onion, and sour cream. For seasoning, you will need red wine vinegar, fresh dill, garlic powder, salt and pepper. You can also a little bit of granulated sugar in order to balance the acidity a little bit, but this remains optional.

 

You will prepare this salad in 3 main steps. First, you combine the sour cream with vinegar, sugar and dill. Second, you season with the remaining ingredients. Finally, you mix red onion with the evenly and thinly sliced English cucumbers. That is all that you have to do to make this yummy and creamy salad. It is better to eat right away or you can chill it for a maximum of an hour and have it cold. We do not recommend keeping it more than that in the refrigerator so as not to start getting watery and flavourless.

INGREDIENTS:

  • ½ cup of sour cream
  • 3 tablespoons of red wine vinegar
  • 1 tablespoon of chopped fresh dill
  • Optional: 1 teaspoon of granulated sugar
  • ¼ teaspoon of garlic powder
  • Salt and pepper according to your state
  • 2 thinly sliced large English cucumbers
  • ¼ red onion ( Slice it thinly)

 

INSTRUCTIONS:

  1. Combine sour cream, vinegar, garlic powder, dill and sugar in a medium bowl. Mix them well.
  2. Season these ingredients with some salt and pepper and taste until you obtain the desired taste.
  3. Add in the cucumbers that are previously sliced with the red onions and mix everything to combine well. Make sure that all cucumbers are coated with the sour cream mixture.
  4. Serve right away at room temperature or serve it chilled by refrigerating it for one hour.

 

Notes:

  • You can double the serving amount by doubling the ingredients. If you want to make the triple of this serving, triple the amount of ingredients provided above.
  • We prefer using English cucumbers because they do not have much seeds, but you can use any other type that you like, such as, Persian cucumbers.
  • The type of onions is also optional, but we recommend using red onions.
  • We don’t recommend making this salad ahead of time.
  • It is almost impossible to prevent cucumbers from becoming watery since they are actually 90% water. What you can do is sprinkle a little salt on top for 30 minutes or so to make them just a LITTLE bit dry.
  • You can peel the cucumbers if you like. I actually leave them as they are. It saves time and gives a nice green colour to the salad. Besides, the skin is very nutritious.
  • You can substitute sour cream with ½ cup of Greek Yogurt or mayonnaise.
  • You can make this recipe vegan by using coconut or almond yogurt.
  • For a more refreshing effect, you can add some herbs like chives and parsley. Chop them and toss them in your salad.
  • If you like your salads to be spicy, add a pinch of cayenne pepper.
  • For a healthier and a creamier salad, add in some diced avocado.
  • To have even slices, you can cut your cucumbers using a Mandoline or a sharp knife.
  • For a better flavour, we recommend using fresh dill instead of the dry one.
  • We recommend serving this salad immediately after preparing it to prevent it from becoming watery.

 

How to store?

It is a refreshing salad that demands to be eaten right away. We do not recommend storing it.
