The taste of this casserole is divine. The different tastes of the ingredients mix together to create a very scrumptious meal. The different seasoning adds a special kick to our casserole. It is well seasoned and to add a tangy taste, you can add crushed red pepper or Jalapeno. Cabbage Roll Casserole

INGREDIENTS:

  • 1 lb lean ground beef
  • 1 medium chopped onion
  • 3 minces cloves of garlic
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cayenne pepper
  • 2 tablespoons brown sugar
  • 1 (15 ounces-can) tomato sauce
  • 1 (14.5 ounces-can) low sodium beef broth
  • 1 cup of uncooked long grain white rice
  • 2 tablespoons olive oil
  • 1 chopped medium head green cabbage
  • 1 1/2 cups finely shredded sharp cheddar
  • 1 1/2 cups finely shredded Monterey Jack Cheese

 

INSTRUCTIONS:

  1. Start by heating your oven at 350 degrees Fahrenheit.
  2. Grease your 9×13 inch casserole dish with olive oil or spray it with non-stick cooking spray or olive oil spray.
  3. In a skillet, cook the ground beef until it is halfway browned. Then, add the onion. When the ground beef is fully browned, reduce the heat to low and add garlic. Cook for a minute while continuously stirring. Drain any additional fat in the skillet.
  4. Add beef broth, rice, paprika, onion powder, brown sugar, cayenne and tomato sauce to the cooked ground beef skillet. Allow it to boil a little bit. Cover the skillet with a lid and let it simmer for 20 minutes. The rice should be tender.
  5. Put another large skillet over medium heat.
  6. Heat 1 tablespoon of olive oil.
  7. Cook half of the cabbage for 5 to 7 minutes.
  8. Once the cabbage is cooked, spread it over the bottom of the casserole dish.
  9. Add half of the cooked ground beef mixture on top.
  10. Blend the cheeses together and sprinkle half of the quantity over the ground beef mixture.
  11. Repeat the same process with the remaining ingredients: cook the cabbage, spread it over the cheeses, spread the beef mixture and sprinkle the remaining cheese blend.
  12. Using aluminum foil, cover the casserole dish and place the latter to cook in the oven for 20 minutes.
  13. Take it from the oven, remove the aluminum foil and put it back in the oven to cook for another 20 minutes until the cheese is slightly brown.
  14. Serve while it is warm and enjoy!

 

Notes:

    • Other things you can change or add about this recipe:
      • You can add 1 to 2 tbsps of Cajun seasoning to the other spices.
      • You can also add 1 to 2 pinches of crushed red pepper to the tomato sauce to add a tangy kick to our recipe.
      • You can also add minced jalapeno when you add the minced garlic to the cooked ground beef.
      • When you pour the tomato sauce, you can also add a 14.5-ounce can of fire-roasted tomatoes.
      • Instead of Monterey Jack cheese, you can use pepper jack cheese.
    • You can make this whole casserole in a large skillet, just make sure that it is oven proof. Or you can just make it by using the stovetop only.
