MEXICAN RICE CASSEROLE
The flavor is similar to the most popular food-style Mexican rice. It’s just transformed into a full and hearty dinner in just 30 to 30 minutes! This rice casserole has long been an essential in our house because it’s something we be all in agreement about. It was once something I would mix on the stove and then bake. It was until I realized it was possible to turn it as a stovetop single pan dish. The rice cooks in the pan with the ground beef that has been cooked and corn, onion tomato sauce, salsa and spices for a delicious flavor! Once the rice is soft, you can mix in your favorite cheese that you’ve shred and garnish with green onions If you’d like. We love this dish with a portion of salsa, and a scoop of Sour cream!
Ingredients
#1 Pound Ground Beef
1 Small Onion diced
#Salt & Pepper, To Taste
# 2 Tablespoons Taco Seasoning
1. Teaspoon Garlic Powder
#1 Cup Long Grain White Rice See Note
#1 1/2 Cups Beef Broth
#115 Ounce Can Corn Drained
#8 Ounces Tomato Sauce
#1/2 Cup Salsa
1. Cup Cheese Shredded
Instructions
Prepare the beef, ground and onion along with pepper and salt according to your preference in a large pan over medium-high heat until it isn’t pink. Discard grease if required.
Bring the pan back to the stove, and sprinkle the meat with the seasonings for taco and garlic powder.
Incorporate the broth, rice and corn. Add tomato sauce, tomato and salsa.
Bring the liquid to the point of being at a boil. Reduce heat, cover to simmer for about 18-20 minutes until the rice is soft.
Add cheese on top and then cover with cheese and return the lid to the pan for a couple of minutes, or until cheese has melt.
