This is my all-time favourite slow cooker recipe . It requires just five minutes or less to put together, and rewards with a delicious healthy and healthy meal at the time of dinner . The burrito bowls consist of chili-spiked brown rice and corn, black beans along with tender bits of chicken shredded . Everything cooks in the pot, so all that you must do is serve yourself a bowl , then top it with cheese.
This recipe is usually prepared in two phases. The first step is to begin cooking the chicken with the tomato juice and diced broth, then I add the rice, beans and corn in the middle of cooking. This will ensure that everything is cooking in the same order and that the beans don’t become too soft. If I’m planning to be absent for a while and will not be at home to cook to the rice dish, then I simply remove it from the cooker in the meantime and heat it in the stove top just prior to serving. It is a bit messy in one pot, but it allows me some flexibility in my cooking schedule .
Ingredients
1 pound bonelessand skinless chicken breasts that are about 2 large breasts
2 tablespoons olive oil
Three teaspoons onion powder
Two teaspoons garlic powder
Three teaspoons chili powder
Two teaspoons cumin
1 teaspoon of salt from kosher as well as freshly crushed pepper, to taste
3 cups low-sodium, chicken broth
1 15 1 oz canned tomato diced draining
1 14 oz. can of black beans, drain and washed
2 . 3/4 cup of instant brown rice with whole grain.
1 1/2 cups colby Jack cheese
Instructions
Place chicken breasts into slow cooker.
Put chicken broth in the breasts of chicken and mix in canned tomatoes onion powder, olive oil chili powder, garlic powder as well as salt and pepper.
Cook at a low temperature for about 4 hours, or until the chicken is at 165°.
Take chicken breasts out of the slow cooker.
Then turn the slow cooker up to high and mix in instant rice and black beans.
Cook for 30-45 minutes on high or until rice is soft.
Then add the chicken the pan, then top with cheese and cook for another few minutes or until cheese has melted.
Serve with freshly diced tomatoes, green onions, sour cream avocados, or Guacamole.
