Nothing competes with a refreshing salad on a hot day. In this recipe, we are introducing watermelon salad. It is rich in flavour thanks to the mint and the seasoning. For more flavours, some ideas are suggested in the note below.
This refreshing salad is made in few minutes. You just have to prepare the ingredients as instructed and the salad will be assembled in 3 minutes only. The combination between the taste of mint and lemon with watermelon is simply scrumptious. The crunchiness of the cucumbers also adds a special taste to our salad. Make it and have it while it is still fresh!. You are going to love it!
INGREDIENTS:
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh lime juice
- 5 to 6 cups seedless Chilled watermelon, (cut into 1-inch cubes)
- 2 cups chopped cucumbers,
- 1 cup packed mint leaves
- 1/3 cup crumbled feta cheese
- 1/4 cup extra-virgin olive oil
- Salt,
- Freshly cracked black pepper,
INSTRUCTIONS:
- In a small bowl, put red onions in lime juice. Allow it to sit between 10 to 15 minutes until it becomes soft.
- Combine, watermelon, mint, cucumber, and feta in a large bowl.
- Add the red onion to the salad while keeping the lime juice.
- Let’s start making the dressing. In a small bowl, whisk together olive oil with the reserved lime juice. Whisk in salt and pepper.
- Add this dressing to the salad in the large bowl. Combine everything and toss. You can add salt and pepper.
- Serve! (You can also chill this for a maximum of 2 hours. Then, serve)
Notes:
- Things you can change and add anything to the recipe. Here are some ideas:
- You can use black olives.
- You can use different herbs; parsley, arugula or basil instead of mint.
- You can use other types of cheese instead of feta cheese.
- To make it spicy, add jalapeno pepper.
- You can also add cubed avocado.
- You can add lime zest
- It is preferable to have this salad once you make it. However, you can store it for a day or two maximum of you need to.
- You can serve this watermelon salad with grilled chicken or salmon. This would make a great lunch.
- English or Persian cucumbers are a great choice for our salad.
