This chicken broccoli dish is a lighter rendition of my mom’s delicious, creamy dinner of chicken and broccoli from my my childhood.
It was among her top recipes to use up leftover chicken and turkey.

It was always called the chicken and broccoli casserole, as well as turkey and broccoli dish.

I created this slim chicken broccoli casserole using 98 percent fat-free chicken soup, evaporated milk that is non-fat and cheddar cheese with reduced fat.
Also, I added more broccoli and only a thin dusting of grated Parmesan and breadcrumbs.
Then I opted to not mix the breadcrumbs with butter that had been melted and decided to drizzle the surface of the casserole with olive oil that I had in my spray bottle.
We enjoyed this thin chicken broccoli casserole last week and served it with warm French bread as well as a simple salad.
I was able to barely take a photo before it vanished!
INGREDIENTS
3 boneless, skinless, chicken breasts, cooked and diced
2 packages (10 ounce) frozen broccoli cuts, cooked and drained
2 cans (10-3/4 ounce) 98% fat-free cream of chicken soup
¾ cup non-fat evaporated milk
1 teaspoon lemon juice
1 cup reduced fat shredded cheddar cheese
½ cup Italian-flavored dry bread crumbs
2 Tablespoons grated Parmesan cheese
Cooking spray
INSTRUCTIONS:
The oven should be heated up to 350°F. Grease a 9×13-inch baking dish using cooking spray.
A large mixing bowl mix together the chicken that has been cooked and broccoli.
A smaller bowl combine the soup with the milk, lemon juice and the. Mix this with the broccoli and chicken and mix to combine.
The mixture is evenly spread across the baking dish greased.
Sprinkle with the cheddar shredded. Combine the breadcrumbs with the parmesan and sprinkle it evenly on surface of the dish.
Use cooking spray to lightly spray.
Bake covered, at 350 ° for about 25-30 minutes up to the point that it is bubbly.
