INGREDIENTS:
- 3 pounds of halved red potatoes,
- 2 tablespoons olive oil
- 5 cloves minced garlic
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/3 c grated Parmesan cheese
- Kosher salt & black pepper,
- 2 tsps of unsalted butter
- 2 tsps chopped parsley leaves
INSTRUCTIONS:
- Prepare your oven by turning it on at 400 degrees Fahrenheit.
- Spray your baking sheet with non-stick spray.
- Place the halved potatoes in a bowl.
- Add in garlic, thyme, oregano, basil, olive oil, and parmesan.
- According to your taste, add a sprinkle of salt and pepper.
- Combine everything together while making sure that your potatoes are well-covered with other ingredients.
- Spread the potatoes side up in an even layer on the prepared baking sheet.
- Put them in the oven to bake between 25 to 30 minutes.
- You can turn the on the other side once you reasch half the time. You should obtain a golden brown color on each side.
- On the stove or in a microwave, melt some butter before you serve.
Notes:
- To obtain the best crispiness, it is recommended to use Yukon gold potatoes or Russet Potatoes. They are starchy which contributes to the texture. However, if you use other potatoes like new ones, your dish won’t be as crispy as you want.
- Make sure to cut your potatoes evenly. So, that they are cooked at the same time.
- The size of potatoes controls the time of cooking. Make sure to check if they are on the right texture by inserting a fork.
- You can’t make these potatoes ahead of time, they will lose their crispiness and become soggy.
- Do not use a lot of olive oil to prevent the potatoes from becoming soggy.
