This is an amazing potato salad!! I’m feeding many people, so I increased up..did 5 lbs. of red potatoes and included the peelings of the potatoes in the mix. Also, I utilized yellow along with green onions. I doubled the ingredients. Accidentally, I bought the Walmart Sweet relish brand, and it was amazing tasting! A perfect amount of sweetness to the potato salad. I love this recipe. We have eaten many different potato salads, but this is without doubt the most delicious.

The dressing was made using a different bowl making the mayonnaise more than 3/4 cup, using an ample 1/2 cup of sweet pickle relish as well as an ample tablespoon Dijon crushed mustard.
