Mounds Cake with Coconut Filling

Do you have a party or a special event at home? Or are you simply craving a chocolate-y layered cake? If so, this recipe is for you. Don’t be scared from hearing a layered cake. This will actually take you less than an hour to prepare.

Layered cakes are everybody’s favourite. Kids, teens and adults will always want to have a bite from a layered cake. This chocolate cake is not any cake. It is actually made with a special coconut filling. Nobody can deny that when coconut and chocolate are combined, they create a heavenly taste. This cake is easy to make, takes less than hour to make and with few ingredients that are available in every store (and even at your home). So, what are you waiting for? Make this mouthwatering cake and enjoy every bite!

 

INGREDIENTS:

To make the cake:

  • 1 box chocolate cake mix,
  • 1/2 cup vegetable oil,
  • 1 1/2 cups water,
  • 3 large eggs,

To make the filling:

  • 1 1/2 cups evaporated milk
  • 1 cup sugar
  • 16 large marshmallows
  • 14 ounces frozen coconut,

 

To make the Chocolate Ganache Icing:

  • 2 cups heavy cream
  • 1 1/2 teaspoons pure vanilla extract
  • 2 cups semisweet chocolate chips
  • OPTIONAL: Sweetened coconut, toasted if desired,

 

 

INSTRUCTIONS:

  1. Assemble the ingredients and combine them according to the method of instruction provided in the package.
  2. Bake the cake. Then, allow it to cool as directed.
  3. Slowly split each cake layer horizontally to make 4 layers.
  4. To make the filling, place a sauce pan over medium heat. Mix the evaporated milk with marshmallows and sugar. Keep stirring until the marshmallows melt and the sugar dissolves.
  5. Remove the saucepan from the heat. Add in the coconut and stir again.
  6. To make the ganache icing, place a saucepan over medium heat, simmer the heavy cream. Add in the chocolate and vanilla. Keep stirring until the chocolate melts.
  7. Remove from the heat.

 

Assembling the cake:

  1. Put the bottom of a layer cake. Spread the coconut filling.
  2. Add another layer of the cake and spread the filling.
  3. Pour the rest of the filling on top of the cake and spread it.
  4. Pour the chocolate ganache while it’s still warm on top of the cake. It will drip on the sides
  5. If you wish to decorate your layered cake, sprinkle some flaked coconut on top.

 

Notes:

  • You can also use chocolate fudge cake mix instead of a chocolate cake mix.
