Jalapeno cheddar Focaccia is light, soft, chewy and fluffy. It almost dissolves in your mouth. Due to the ingredients used, this focaccia is cheesy and spicy. If you do not like it spicy, you are free to remove the Jalapenos or substitute them with black olives if you like. This scrumptious focaccia is prepared in 10 minutes only. It needs 35 minutes to cook and 18 hours to rise. It requires a little bit of patience, but it is definitely worth the wait.

How to serve?

Slice the Jalapeno Cheddar Focaccia into wedges and serve it while it is warm.

How to store?

  • As we previously mentioned, the bread of focaccia is made one day ahead of time. So, you can make the dough a day before you feel like having focaccia. Then, you can garnish it as instructed above on the day of serving.
  • You can store it in an airtight container in the fridge to be consumed as soon as possible. The sooner it is eaten, the better. If it is kept in the fridge, warm it in the microwave or in the oven and voila! Enjoy!

INGREDIENTS:

  • 4 cups of bread flour
  • 1 teaspoon of active dry yeast
  • 2 and 1/2 teaspoons of salt
  • 2 tablespoons honey
  • 16 oz water (at room temperature)
  • 3/4 cup cheddar cheese (cut into half-in cubes)
  • 2 sauteed small jalapenos,
  • 2 tablespoons olive oil, reserved

INSTRUCTIONS:

  1. Add flour, honey, salt and yeast in a large bowl. Combine well.
  2. Pour water slowly while stirring the dough with a wooden spoon until it is a little bit sticky.
  3. Cover the large dough ball with plastic wrap and allow it to sit overnight of for a minimum of 18 hours and maximum of 24 hours at room temperature.
  4. When it finishes sitting, start by heating the oven at 425 degrees Fahrenheit.
  5. Saute the jalapenos in 1 tbsp. of olive oil until they are a little bit soft.
  6. Take your 9-inch cast iron skillet and grease it lightly with 1 tbsp. of olive oil.
  7. Uncover the large bowl and punch the dough down.
  8. Knead in the cheddar cubes and the sautéed jalapenos. (Keep some of these to garnish at the end.)
  9. Pat the dough into the greased pan and cover it with plastic wrap. Allow it to rise for 30 minutes.
  10. Brush 1 tbsp. of olive oil on top of the dough and make little indentations by pressing your fingers into the dough.
  11. Sprinkle the reserved Jalapenos and cheddar cubes on top.
  12. Place the pan in the oven to cook for 35 minutes maximum until the bread is golden brown.
  13. Take out the focaccia from the oven and let it cool for 10 minutes.
  14. Serve while it is still a bit warm. Enjoy!

Notes:

  • While in the oven, if the bread is turning brown too fast, cover it lightly with foil.
  • You can choose other things to garnish your focaccia with, but I believe that cheddar is important to keep. It is a must try
