2 lbs russet potatoes
4 hard-boiled eggs, peeled and chopped
1 cup mayonnaise
1/4 cup yellow mustard
1/2 cup sweet pickle relish
1/2 cup celery, finely chopped
1/2 cup red onion, finely chopped
Salt and pepper to taste
Paprika for garnish
Start by boiling the potatoes. Place the potatoes in a large pot, add enough water to cover them, and bring to a boil. Cook the potatoes until they’re tender, about 15-20 minutes. Once done, drain the potatoes and let them cool.
Once the potatoes are cool enough to handle, peel and cut them into bite-sized chunks.
