Casseroles are my go-to dishes for dinner with my family or with guests. Whenever I have somebody coming to my house, I wipe up this cosy meal to make them feel comfortable and as if they are at home. Personally, casseroles always give me a homey vibe. In this recipe, we are making a chicken Gloria casserole.

 

This chicken casserole is prepared in 15 minutes and baked for 30 minutes. This means that in less than an hour you can make one of the most comfortable dishes ever. I specifically love to casseroles when it is a little bit cold outside. You feel its tangible and emotional warmth even more.

You can make this casserole with few ingredients only. You will only need skinless and boneless chicken breasts, flour, olive oil for browning the chicken, butter, mushroom, sherry wine, mushroom soup, salt, pepper and Swiss cheese. To decorate the casserole, we add chopped parsley on top. This casserole is far from being dry thanks to its ingredients. It is very moist, creamy and cheesy. It also tastes marvelous. It is salty enough with a special tanginess of the mushrooms. This adds a special kick to the taste of our casserole.

This dish is a great idea for lunch, dinner or as one of the dishes you can serve at an event or a party. Its method of making is very simple and easy to follow. You start by seasoning the chicken breasts, dipping them in flour and browning them on both sides in a skillet. In the same skillet, you add butter, mushrooms, the wine, the soup, salt and pepper. You let them cook for a while. Then, you pour them on top of the chicken breasts in a baking dish. Top with some cheese and bake them in the oven. INSTRUCTIONS:

  1. Start by heating the oven at 350 degrees Fahrenheit.
  2. Add salt and pepper to the chicken on both sides.
  3. Dip the chicken in flour and shake it off to remove any excess.
  4. Put a large skillet over medium heat to warm the oil.
  5. Once it is hot enough, fry the chicken on both sides until they are brown.
  6. Put the chicken in your 9×13 baking dish after it has browned.
  7. Put butter to the skillet and increase the heat to medium-high.
  8. Add mushrooms to the skillet with some salt and pepper. Allow the mushrooms to cook until they are golden brown. Pour in the sherry wine and stir. Allow it to simmer for a maximum of 2 minutes.
  9. Mix in the soup well and let everything cook.
  10. Pour this sauce over the chicken that is laying in the baking dish and top with the cheese of your choice.
  11. Cover the dish with aluminum foil and place it in the preheated oven to bake for 30 minutes.
  12. Take the foil off and broil the chicken in the oven for a minute or two until the cheese returns brown.
  13. Allow it to coo a little bit for 5 minutes.
  14. Garnish with some chopped parsley and serve.
