One of the best quick and refreshing meals you can ever make is a salad. It is perfect to have it in all seasons, but it is great to make it in a hot summer day. Salads are also great to prepare for a picnic or for a lunch break at work. They don’t take a lot of time to make and they are very scrumptious.
This salad is a balanced one. It is rich in ingredients. It is made with grilled chicken, avocado, parmesan cheese and lettuce. The dressing in this salad makes it very creamy and moist. It covers all the ingredients. Enjoy this mouthwatering Caesar salad.
INGREDIENTS for Chicken Cordon Bleu Crescent Rolls :
- 6 chicken tenders,
- 2 tablespoons olive oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon Fresh ground pepper
- 6 strips cooked and cut into pieces bacon
- 6 cups chopped Romaine lettuce
- 1 1/2 cups of halved cherry tomatoes
- 2-3 sliced hard boiled eggs
- 1 thinly sliced avocado
- Shaved parmesan cheese
- 2 cups croutons
Salad Dressing:
- 1 cup mayonnaise
- 2 minced small garlic cloves,
- 1 1/2 teaspoon Anchovy paste,
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1/2 cup freshly grated Parmesan
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup olive oil
INSTRUCTIONS:
- Mix in the Caesar dressing ingredients in a small bowl. Set aside.
- Warm up a grill on medium-high heat. Brush the chicken with olive oil and add salt and pepper. Place the chicken on the grill and let them cook for about 5 minutes on each side. Slice them after you let them rest for 5 minutes.
- Add the chopped romaine lettuce in a large bowl. Add in the bacon, chicken, tomatoes, sliced eggs and avocado.
- Pour the Caesar dressing on top of the ingredients on the large bowl. Add in the croutons and Parmesan on top. Drizzle some fresh ground paper.
- Serve and enjoy!
Note:

- You can add 1 tbsp of water to the dressing to make it thinner.
- Instead of the chicken tenders, you can use 2 boneless chicken breasts.
