so, you know how sometimes you’re craving a cheeseburger but don’t want to deal with buns getting soggy or falling apart in your hands?
made these wraps last Tuesday after my kid came home from school saying he was “so over regular burgers” which felt dramatic but also fair. I was scrolling TikToks waiting for dinner inspiration and saw someone make something similar. thought I’d try it and honestly it’s become our new Tuesday night thing.
first time I made them I used those massive burrito tortillas and they were way too big. everything just slid out the bottom and made a huge mess. second attempt I cooked the beef too long and it got all dry and crumbly lol. third try I finally figured it out and now my picky eater actually requests them.
mine are never perfectly rolled and the cheese always leaks out one side but whatever they taste amazing and that’s what matters.

takes like 20 minutes total which is faster than waiting for delivery
uses stuff you probably already have in your fridge and pantry
kids think they’re fun because wraps feel different than regular food
you can customize each one so everyone’s happy
here’s the stuff but honestly just use what you have:

Brown the ground beef in a big skillet over medium high heat. break it up with a wooden spoon as it cooks. takes maybe 8 minutes.
Drain most of the grease. I pour it into an old can because I’m not trying to clog my sink.
Season the beef with salt, pepper, and garlic powder. I never measure just shake it til it looks right.
Warm the tortillas for like 30 seconds in the microwave. this makes them bendable and less likely to crack when you roll them.
Lay out a tortilla on a plate or cutting board. I do this assembly line style when I’m making a bunch.
Spread some mayo or mustard on the tortilla if you want. I do both because I like things messy and flavorful.
Add a scoop of the cooked beef down the middle. not too much or it won’t roll. I always overfill mine and regret it.
Sprinkle cheese on top of the hot beef so it melts a little. this is key for getting everything to stick together.
Add lettuce, tomato, pickles, and onion on top. I let my kids pick what they want so everyone’s different.
Drizzle ketchup and mustard over everything. again I probably use too much but that’s just me.
Fold the sides in first then roll it up like a burrito. the bottom always tears a little on mine but it still works.
Eat them right away while they’re warm. I usually make everyone wait so we can eat together but my husband always sneaks bites while helping.


these are best eaten fresh but you can wrap them in foil and keep in the fridge for maybe 2 days. they get soggy though.
reheat in the microwave for like a minute but honestly they’re never as good as fresh. the tortilla gets weird.
don’t freeze these. I tried once and when I thawed them the lettuce and tomato turned into mush and it was gross.
I have a container in my fridge right now with leftover beef from these that I forgot to label. pretty sure it’s from Friday but could be older. probably should throw it out but I’ll probably use it for tacos tonight instead. living dangerously.

these are estimates. depends how much cheese you pile on which for me is always way more than reasonable.
can I use ground turkey
yeah works fine just tastes a little different. might be drier so add some olive oil to the pan. I do this sometimes when I’m pretending to be healthy
what if I don’t have tortillas
use lettuce wraps for low carb. or pita bread. or just eat it in a bowl with a fork. no rules here
mine keep falling apart what am I doing wrong
probably overfilling them. use less stuff than you think. also make sure you fold the sides in before rolling. watch a burrito rolling video if you need to
can I make these ahead for meal prep
not really. you could prep all the ingredients separately and assemble when you’re ready to eat. but rolling them ahead makes them soggy and sad
