okay so… my kid had a sleepover last weekend and I needed to feed like six children breakfast without losing my mind.

listen, I was just thinking about regular pigs in a blanket but like breakfast version because honestly who doesn’t want sausage wrapped in pastry at 8am. I saw something similar on TikTok at like midnight one night when I couldn’t sleep and was like yeah I can do that.

First time I made these I used the wrong kind of sausage and they were super greasy and kinda fell apart. The kids still ate them but it was messy. Second attempt I figured it out and now these are my go-to for basically any morning when I need something that feels special but takes like zero effort.

What You Need

Crescent roll dough 2 cans the tubes that pop open
Eggs 4 eggs scrambled
Shredded cheese maybe a cup cheddar or whatever
Butter little bit for the eggs
Salt and pepper some for the eggs
Everything bagel seasoning optional I sprinkle this on top
Maple syrup for dipping trust me on this

How I Actually Make These

 

Preheat your oven to 375 degrees. I always forget to do this first and then have to wait around so learn from my mistakes.

 

Cook your sausage links if they’re not already precooked. I just microwave them for like a minute per the package directions because I’m lazy. If you’re using raw sausage you gotta cook them in a pan first until they’re done. Let them cool a bit so you don’t burn your fingers.

 

Scramble the eggs in a pan with butter, salt and pepper. Keep them a little soft because they’ll cook more in the oven. This is where I always mess up and overcook them but whatever they’re going inside pastry so it’s fine.

 

Open the crescent roll cans – you know that scary pop sound. Unroll the dough and separate it into triangles. The perforations are already there so just pull them apart.

Now here’s the assembly part. Put a cooked sausage link at the wide end of each triangle. Add a

spoonful of scrambled eggs on top of the sausage. Not too much or it’ll all fall out. Sprinkle some cheese on there too.

 

Roll them up starting from the wide end and going to the point. Just like regular crescent rolls. Mine never look perfect and some of the egg always squishes out the sides but that’s part of the charm I guess.

 

Put them on a baking sheet with parchment paper or spray it with cooking spray so they don’t stick. Space them out a little because they puff up.

 

Brush the tops with melted butter if you want them extra golden. I usually skip this step because I forget. Sprinkle everything bagel seasoning on top if you have it. Makes them look fancy.

 

Bake for like 12-15 minutes until they’re golden brown and puffy. Keep an eye on them because ovens are all different and I’ve definitely burned a batch while checking my phone.

 

Let them cool for a couple minutes because the cheese inside is like lava. Serve with maple syrup for dipping.

Storage and Leftover Drama

These keep in the fridge for like 3-4 days in a container. Reheat them in the oven or air fryer to make them crispy again. Microwave works but they get kind of soggy.

Funny story – I made these for a brunch thing two months ago and brought home the leftovers in a random Tupperware. Put it in the fridge without labeling it because I was tired and just wanted to sit down. Three days later my teenager opens it and goes “what even is this” and I honestly couldn’t remember if it was these or some other breakfast thing I made. Now I put a sticky note on everything with what it is and the date.

You can freeze these before or after baking. If you freeze them unbaked just add a few extra minutes to the baking time. If you freeze them after baking reheat them straight from frozen at 350 for like 10 minutes.

Questions I Always Get

 

Can I use raw sausage instead of precooked?

Yeah but you need to cook it first in a pan. Don’t put raw sausage in there because it won’t cook all the way through in the oven. I learned this the hard way trust me. Like I tried it once thinking oh it’ll be fine and my husband bit into one and it was still pink in the middle. Gross. So now I always precook everything.

 

What if I don’t have crescent rolls?

Ugh okay so this has happened to me more times than I want to admit. You can use puff pastry if you have that – just cut it into strips and wrap it around. Or even biscuit dough works if you flatten it out with your hands or a rolling pin. Won’t be exactly the same texture but honestly still tastes good. My friend Sarah uses flour tortillas sometimes and just rolls them up like taquitos which sounds weird but she swears by it. I haven’t tried that yet.

 

Can I make these the night before?

Kind of yeah. So what I do sometimes is assemble them all and then cover the whole pan with plastic wrap and stick it in the fridge. Next morning just pull it out and bake. They might not puff up quite as much because the dough gets kinda cold and dense but they’ll still taste fine. I’ve done this before early morning soccer games when I had to be out the door at like 6:30am. Nobody complained.

 

Do they have to have eggs in them?

Nope not at all. Sometimes I’m just too lazy to scramble eggs in the morning so I make them with just sausage and cheese. Still really good just not as filling. Or if you have leftover scrambled eggs from yesterday you can use those too. Whatever works honestly.
