I can’t believe that Christmas is only 2 weeks from now! This month has been filled with travel for me, and it’s like I’ve not been home as much. As you’re reading this on Monday morning I’ll be flying on the ground in Chicago to spend the night there.

A few weeks ago I traveled to Galveston, Texas for a meeting at work. My coworkers and me went out for dinner at a fancy seafood establishment that was awe-inspiring. I usually order seafood whenever I’m at work for dinners, because Nick isn’t a fan of seafood and this is my only chanceto try it, haha! We went to a restaurant overlooking the ocean. We had delicious seafood. appetizers. They served panko-crusted asparagus served with delicious crab sauce. I had the crab cake-stuffed shrimp with cheese and macaroni as well as parmesan tomato.

INGREDIENTS

2-3 large beefsteak tomatoes

1 cup of shaved parmesan cheese

1 Tbsp of dried basil

1 Tbsp of dried oregano

2 tablespoons freshly chopped Italian parsley, chopped roughly

INSTRUCTIONS

Preheat your oven up to 400 degrees F. Spray baking sheets using cooking spray.

Cut the tomatoes into 1/4″ slices and place them in a baking tray.

Then, top each slice with enough Parmesan cheese that it covers the entire top along with a sprinkle of oregano and basil.

Cook for about 10 minutes or so, until the cheese, has melted and bubbly.

Serve with Freshly chop Italian parley.

Serve immediately!
